„The savage reduction and ethereal minerality will take your breath away, if nothing else. Struck flint and bones are grated into a sea of citrus and incredibly tart apples. The acidity is so sharp it could cut your palate in two, but there’s ripeness to balance the edgy sourness. Tons of minerality on the long finish.”
